Tomatoes… these blood red berries that transform soups, sauces, salads and stews. When blended with pepper or mixed with dark green vegetables (like bitter leaf, ewedu, spinach and a host of others), the resulting recipe tells the stories of tribes, lands and the different cultures that existed across the breadth of Africa. Being of different varieties, the tomato flavor is commonly described as sweet, tart, tangy or balanced. The amount of sugars, acids, and volatile compounds in a tomato can vary by variety and are mostly genetically determined.
